Vegan Mediterranean Gyros

INGREDIENTS:

For 2 people

FlatBread:

  • 1.5 cup flour 

  • 1/2 cup warm water 

  • 1/2 bag active yeast 

  • 1/2 tsp salt 

  • 1 tsp sugar 

  • 1 tbsp olive oil 

Roasted Veggies + Tofu: 

  • 1 eggplant, sliced

  • 1 zucchini, sliced 

  • 1 yellow and 1 red capsicum (pepper), sliced

  • 1 red onion, chopped into wedges 

  • 1 can chickpeas, drained and rinsed

  • 250g tofu, pressed and sliced 

  • 2 tsp paprika 

  • 1 tsp cumin 

  • 1 garlic clove, minced 

  • salt and pepper to taste 

Red Pepper Hummus (Optional):

  • 1 can chickpeas, drained and rinsed

  • 3 tbsp tahini 

  • 1/2 cup roasted red peppers 

  • 1 garlic clove 

  • Juice from 1 lemon 

  • 1 tbsp olive oil 

  • salt and pepper to taste 

Vegan Tzatziki (Optional):

  • 100ml vegan soy yoghurt (5 tbsp)

  • 1/4 cucumber finely grated 

  • zest from 1 lime and half of the juice 

  • Handful of chopped parsley 

  • salt and pepper to taste 

DIRECTIONS:
 

  1. Begin with the Flatbread. In a medium bowl mix the warm water, yeast, oil and sugar. Set aside for 5 minutes.
     

  2. In another bowl mix together the flour and salt. Add the dry ingredients to the wet mixture and knead to 5 minutes.
     

  3. Once done kneading, place the dough in an oiled bowl, cover and let rise for 1 hour.
     

  4. Once risen, cut the dough into 5 little bowls and roll them out nice and thin. Heat a pan with a little bit of vegan butter on a medium high heat. Cook the bread for 2-3 minutes on each side until puffed and golden. 
     

  5. For the roasted veggies & Tofu (While bread is rising): Preheat the oven to 180 degrees (C) fan-force. In a large bowl add all the spices, olive oil and minced garlic and combine. Next add all of the veggies and tofu to the bowl and lightly toss until all vegetables and tofu are coated in the seasoning. 
     

  6. Add the marinated vegetables and chickpeas to a baking tray lined with baking paper. Cook for 30 minutes until the veggies are caramelised and the chickpeas are crispy. 
     

  7. Cook the tofu in a frying pan, cooking each side for a few minutes until golden (the tofu can also be cooked in the oven but they will not get as crispy). 

Red Pepper Hummus:

  1. Add of the ingredients to a high speed blender and blend until smooth.
     

  2. Adjust the seasoning to personal preference.

 

Vegan Tzatziki:

  1. Add all of the ingredients to a bowl and mix. 

ASSEMBLE the gyros and enjoy! I also added fresh Kalamata olives and sweet chilli sauce!
