Vegan Banana Protein Pancakes

INGREDIENTS:

For 6 thick pancakes 

  • 240ml / 1 cup unsweetened dairy-free milk  

  • 2 tbsp coconut oil (or oil of your choice)

  • 1 large (2 small) banana

  • 200g / 1.5 cups all purpose flour 

  • 1-2 scoops vegan protein (plain, vanilla or banana)

  • 2 tbsp cane sugar 

  • 1 tbsp baking powder

  • 1/4 tsp baking soda 

  • 1/2 tsp salt

  • 1-2 tsp cinnamon 

DIRECTIONS:
 

  1. Add all of the ingredients to a blender (start with wet ingredients to avoid flour sticking to the bottom). Blend until smooth (no longer than 1 minute).
     

  2. Let the batter rest for 5-10 minutes (it will be pretty thick but thats good!).
     

  3. Butter a pan on medium heat. Once the pan is hot add a ladle 1/6 of the batter. Cook each side for 2-3 minutes until golden. Place the finished pancakes in a warmed oven whilst making the rest.
     

  4. Serve with everything your heart desires! I did maple syrup, sliced banana, blueberries, raspberries, more cinnamon and chopped walnuts.
