Tofu Scramble

INGREDIENTS:
For 2 servings
Tofu Scramble:

1 large white onion, diced

2 garlic cloves, minced

1 black (280g) firm tofu, drained and pressed (for 1 hr)

1 tsp turmeric

1 tsp cumin
-
1 tsp paprika
-
2 tsp dijon mustard

1 small bunch of parsley, chopped

1/4-1/2 tsp salt (you can add more or less)

1/4 tsp pepper
-
1/2 tbsp soy sauce
Sides:

Garlic mushrooms
-
Asparagus
-
Avocado
NOTE: I understand it looks like a lot of ingredients! haha but I just wanted to pack as much flavour into the tofu as possible and I honestly loved it! But of course you can sub-out any of the spices or seasoning ingredients as you like)
DIRECTIONS:

Heat 1 tsp olive oil or vegan butter in a frying pan on medium heat and gently fry the onion for 5 minutes, until translucent and fragrant. Stir in the garlic and spices and cook for 1 minute.

Roughly mash/crumble the tofu in a bowl using a fork or your hands, making sure to keep some pieces chunky. Next add the crumbled tofu to the pan with the onion and spices and fry for 5-10 minutes on a medium-high heat.

Once done cooking season it with the mustard, soy sauce, salt and pepper and fold in the parsley. Serve immediately with fresh sourdough and sides of your choice. I roasted a few button mushrooms that were marinated in olive oil, minced garlic and parsley and also roasted some asparagus lightly in olive oil. I also served it with avocado slices, a lime wedge and some chilli flakes!
