INGREDIENTS:

For 2 servings

Tofu Scramble:

  • 1 large white onion, diced

  • 2 garlic cloves, minced

  • 1 black (280g) firm tofu, drained and pressed (for 1 hr)

  • 1 tsp turmeric

  • 1 tsp cumin

  • 1 tsp paprika

  • 2 tsp dijon mustard

  • 1 small bunch of parsley, chopped

  • 1/4-1/2 tsp salt (you can add more or less)

  • 1/4 tsp pepper

  • 1/2 tbsp soy sauce

Sides:

  • Garlic mushrooms

  • Asparagus

  • Avocado

NOTE: I understand it looks like a lot of ingredients! haha but I just wanted to pack as much flavour into the tofu as possible and I honestly loved it! But of course you can sub-out any of the spices or seasoning ingredients as you like)

DIRECTIONS:

  1. Heat 1 tsp olive oil or vegan butter in a frying pan on medium heat and gently fry the onion for 5 minutes, until translucent and fragrant. Stir in the garlic and spices and cook for 1 minute.

  2. Roughly mash/crumble the tofu in a bowl using a fork or your hands, making sure to keep some pieces chunky. Next add the crumbled tofu to the pan with the onion and spices and fry for 5-10 minutes on a medium-high heat.

  3. Once done cooking season it with the mustard, soy sauce, salt and pepper and fold in the parsley. Serve immediately with fresh sourdough and sides of your choice. I roasted a few button mushrooms that were marinated in olive oil, minced garlic and parsley and also roasted some asparagus lightly in olive oil. I also served it with avocado slices, a lime wedge and some chilli flakes!
