Spiced Pear Porridge

INGREDIENTS:
Ingredients - For 2 bowls
Porridge:

1 cup (90g) rolled oats

2 cups (475ml) water

0.5 cups (118ml) almond milk

1 tbsp chia seeds
-
1 tsp vanilla extract
Spiced Poached Pear:

2 pears, pealed and dec-cored
-
1/2 tsp turmeric
-
1 knob fresh ginger, roughly sliced

1/2 tsp cinnamon
Toppings (Optional):
-
Almond butter
-
Cinnamon
-
Vegan Yoghurt
DIRECTIONS:

Add the oats and water to a pot and bring to the boil. Once boiling, reduce the heat to medium low and add your milk, chia seeds and vanilla extract, stirring constantly.

Cook the oats for approx. 5 minutes until your desired consistency is reached. Adding more milk if needed.

Meanwhile, in a seperate pot bring the water to boil. Once boiling reduce the heat to a medium-high heat and add your pealed pears, turmeric, ginger and cinnamon. Cook the pears for 5-10 minutes (or until soft). Take out and slice.

To assemble distribute the oats between two bowls. Sprinkle with cinnamon and add 1/2 tbsp of almond butter (optional). Top with your sliced poached pears and enjoy with a coffee!
Note: To de-core your pears using a teaspoon go from the bottom of the pear and gently scoop out a small half circle in the middle of the pears. This is where the seeds are.
