Roasted Stuffed Pears

INGREDIENTS:

For 8 small serves (1/2 pear stuffed) 

  • 4 pears 

  • 1 cup rolled oats 

  • 1/2 cup maple syrup 

  • 3 tbsp coconut shards 

  • 1 cup chopped almonds 

  • 1 tsp vanilla extract 

  • 1 tsp cinnamon 

  • 1/2 tsp nutmeg

  • 1/2 tsp salt 

DIRECTIONS:
 

  1. Preheat your oven to 175 degrees (C) fan-force.
     

  2. Slice your pears in half and scoop the seeds from the center to leave space for the filling. Cut off a tiny slice of the pear bottom so that the pears lie flat.
     

  3. Next, add your oats, maple syrup, chopped almonds, vanilla, ground cinnamon, nutmeg, coconut and salt to a mixing bowl and stir to combine.
     

  4. Stuff the filling into the pears until you use all the stuffing. The stuffing will be piled high.
     

  5. Next, place the stuffed pears into a greased baking dish of any size. Place in the oven and bake for 40-50 mins until the pears are soft and the topping has crisped.
     

  6. Remove the stuffed pears from the tray and let cool. Top with vanilla or natural nondairy yoghurt.
