Refined Sugar Free Banana Bread


For 1 Loaf 

  • 1 3/4 cups (245g) flour (spelt, whole wheat or all-purpose)

  • 1/3 cup (50g) pure can sugar 

  • 4 chopped up dates 

  • 2 tsp baking powder

  • 1/2 tsp baking soda

  • pinch of salt 

  • 1/3 cup (75ml) coconut oil in liquid state 

  • 1 tsp vanilla extract 

  • 3 large overripe bananas + 1 for the top 

  • 1/2 (120ml) almond milk (you may need more) 

  • 1 tsp cinnamon 

  • 2/3 cup chopped walnuts 


  1. Preheat oven to 175 degrees (C) fan-force and grease your loaf tin.

  2. In a large sized mixing bowl, mash 3 bananas. Next add oil and vanilla and mix. 

  3. In a seperate bowl combine the flour, sugar, baking soda, baking powder, dates, cinnamon, walnuts and salt. 

  4. Next add the dry ingredients into the wet. Mix well, but do not over-mix, just until the flour is combined. The batter should be slightly thick and lumpy. If mixture is too thick add more milk, especially if you're using heavier flours such as whole-wheat or whole spelt. 

  5. Pour battle into your greased loaf tin. Bake for approx. 40-50 minutes (different tins require different cooking times). 

  6. Serve warm with vegan butter or yoghurt!
