Baked Donut
Peaches

INGREDIENTS:

For 6 serves

  • 6 Donut Peaches rinsed and patted dry with a paper towel

  • 1 tbsp coconut oil 

  • 2 tbsp maple syrup 

  • 1 tsp Cinnamon

  • 1/4 teaspoon fresh ginger, minced (or ground ginger) 

  • 1/2 teaspoon kosher salt

  • 1 tsp vanilla essence (optional) 

  • 1 tbsp cane sugar, or brown sugar (optional)

  • 2-3 tablespoons finely chopped Almonds

 

Optional Toppings:

  • Natural vegan yoghurt (greek yoghurt, or natural skyr) 

DIRECTIONS:
 

  1. Preheat the oven to 180 degrees (C) and prepare a medium size baking dish by rubbing some coconut oil on it or spraying it with non-stick cooking spray. 
     

  2. Melt the coconut oil in a small pan on low heat and then remove from the heat. Add the maple syrup, cinnamon, ginger, salt and vanilla; stir or whisk to combine and dissolve salt.
     

  3. Place the peaches in the sauce and generously coat both sides. Place peaches in the prepared baking dish.
     

  4. Pour the sauce over the peaches in the baking dish. Sprinkle the tops of the peaches evenly with the cane sugar and chopped almonds.
     

  5. Bake for 30 minutes until sauce has caramelised and the peaches are nice and soft. Note: you may have to cover the peaches with foil if your almonds begin to burn!
     

  6. Serve warm or cold with natural yoghurt and sauce on top!
