Rosemary &
Potato Pizza

INGREDIENTS:

For 1 pizza

  • Pizza dough 

  • 0.5 - 1 tbsp olive oil 

  • 2 small-medium sized potatoes, thinly sliced (preferably with a mandolin) 

  • 1 mozzarella ball (approx. 125g)

  • 3-5 tsp mascarpone 

  • a few sprigs of fresh rosemary 

  • Sea salt and black pepper to taste 

DIRECTIONS:

  1. Preheat your oven to its hottest setting. 
     

  2. Carefully stretch out your pizza dough on a sheet of baking paper. Evenly spread olive oil over the pizza base, leaving a 1cm crust boarder.
     

  3. Next place your thinly sliced potato all over the pizza (I like to use a lot and cover the pizza completely. 
     

  4. Next add small amounts of mascarpone on top of the potato slices and finally pull apart your mozzarella ball and distribute it over the pizza.
     

  5. Top with fresh rosemary and a small drizzle of olive oil. Bake for approx. 5-7 minutes (depending how hot your oven is able to get). It's finished when the crust begins to darken and char in places and the mozzarella is melted. Top with fresh sea salt and some cracked black pepper!
