Healthy Banana

Bread

INGREDIENTS:

For 1 Bread Loaf - approx. 8 servings

  • 250 grams all-purpose flour (I substituted 50g all-purpose flour for coconut flour, you can also substitute 50g for a different kind of flour such as almond meal, spelt flour etc) 

  • 1 flax egg (1 tbsp flax meal with 3 tbsp water)

  • 90g rolled oats (2 dl)

  • 1 teaspoon baking powder 

  • 1 tbsp cinnamon

  • 1 tablespoon maple syrup 

  • 200ml almond milk 

  • 1 teaspoon vanilla

  • 5 mashed bananas (try to use very brown bananas for a sweet banana bread) 

Optional add ons (roughly chopped walnuts and choc chips) 

DIRECTIONS:
 

  1. Preheat the oven to 175 degrees (C) and line a loaf tin with baking paper. 
     

  2. Prepare your flax egg (vegan egg) by combining the flax meal and water in a small cup and leaving for 5 minutes to thicken. 
     

  3. Mix the dry ingredients: flour, oats, baking powder and cinnamon.
     

  4. In another bowl mash the bananas. Add the vanilla, maple syrup and milk to the mashed bananas and mix together.
     

  5. Pour the wet ingredients into the dry ingredients and stir together with a spoon. If the mixture seems too dry add a little more almond milk. 
     

  6. Pour the dough into the prepared loaf tin and smooth out with a little water. Then taking a sharp knife cut a line down the middle of the loaf about 1/4 cm deep and starting and finishing about 10 cm from each end of the loaf. 
     

  7. Bake the bread at the bottom of the oven for 35 minutes at 175 degrees hot air. (approx.)
     

  8. The bread is ready when it is crispy and golden! It is a much denser banana bread! Enjoy with a slice of butter

Note: Flax meal is just grounded flax seeds (aka know as linseed)
