Passionfruit Loaf



For 1 loaf

  • 1.5 cups cup flour 

  • 1 cup coconut flour (or almond flour, or just normal flour)

  • 1.5 cups almond milk 

  • 1/2 cup cane sugar (or other raw sugar)

  • 4 tbsp desiccated coconut 

  • pulp from 3 passion fruits

  • 2 tsp baking powder 

  • 1 tsp vanilla extract 

  • 5 dates, seeds removed and finely chopped (optional)

Topped with more passion fruit pulp and fresh fruit!


  1. Preheat the oven to 180 degrees (C) and line a loaf tin with baking paper. 

  2. In a bowl combine the flours, baking powder, sugar and coconut and stir. 

  3. In another bowl combine the wet ingredients: apple sauce, almond milk, passion fruit pulps and vanilla extract. 

  4. Add the wet ingredients into the dry and stir until well combined. Finally fold in your chopped dates.  

  5. Pour the mixture into the loaf tin and place in the oven for 50 minutes or until cooked in the middle. Top with extra passion fruit pulp and fresh fruit!
