Mango Chia

Pudding

INGREDIENTS:

For 2 servings 

  • 3 tablespoons chia seeds

  • 300ml (3 dl) almond milk

  • 4 tablespoons vegan natural yoghurt / Greek yogurt / skyr

  • 200 g mango chunks 

  • Topping of your choice (nuts / muesli / fresh fruit)

DIRECTIONS:

  1. In a medium size jar add the almond milk. Next add the chia seeds and stir immediately with a fork. After 5 minutes stir the chia seeds again as you do not want them to clump together. Do this step one more time.
     

  2. Put a lid on the jar and place in the fridge overnight.
     

  3. The next day, blend the yogurt and frozen mango chunks.
     

  4. Mix the chia pudding and mango mixture together until well combined. NOTE: It might be easier to mix everything together in a bowl and then placing it back in the jar to eat!
     

  5. Top with optional toppings and enjoy!
