Yoghurt Bark

INGREDIENTS:

2 cups vegan plain yogurt (or greek yoghurt or skyr)

1 tbsp maple syrup

1 teaspoon pure vanilla extract

Optional Toppings:
-
Strawberries, sliced
-
Blueberries, some sliced in half
-
Chopped hazelnuts
-
Dried mulberries
-
Sprinkle of cinnamon
DIRECTIONS:

Line a baking dish with baking paper and set aside.

In a large mixing bowl combine yogurt, maple syrup and vanilla; whisk until thoroughly combined.

Transfer yogurt mixture to previously prepared baking dish and spread it around to an even thickness.

Top with berries, nuts and dried fruit (or what ever toppings you like)

Freeze for 2 to 3 hours, or until firm.

Cut into pieces and serve! Keep in the freezer.
