Banana Bread

INGREDIENTS:
For 1 loaf tin

1 cup (136g) all-purpose flour

2 tbsp cornstarch

1 tsp ground cinnamon
-
1 tsp ground cardamon (optional)

2 tsp baking powder
-
1 tsp baking soda
-
4 medium bananas
-
2 eggs
-
1 tsp vanilla
-
½ tsp sea salt
-
5 tbsp olive oil
-
½ cup (100g) sugar
-
½ cups (50g) walnuts, roughly chopped (optional)

½ cups (80g) chocolate chips (optional)
Topping
-
1 medium banana
-
1 tsp sugar
DIRECTIONS:

Preheat oven to 165 degrees (C). Line a 9×5 loaf pan with baking paper.

Mash bananas in a large bowl.

Add eggs, oil, and sugar to bananas. Mix well.

Add in vanilla, cinnamon, cardamon, baking powder, baking soda, and salt. Mix well.

Add the cornstarch and mix.
-
Add in the flour and mix until the batter is smooth.

Mix in optional nuts/chocolate.

Pour batter into prepared baking pan.

Slice the left over banana down the centre lengthwise and place on top of the batter and sprinkle with the sugar.

Bake for approx. 1 hour, or until a knife inserted in the centre comes out clean.
