Banana Bread

INGREDIENTS:

For 1 loaf tin

  • 1 cup (136g) all-purpose flour

  • 2 tbsp cornstarch

  • 1 tsp ground cinnamon

  • 1 tsp ground cardamon (optional)

  • 2 tsp baking powder

  • 1 tsp baking soda

  • 4 medium bananas

  • 2 eggs

  • 1 tsp vanilla

  • ½ tsp sea salt

  • 5 tbsp olive oil

  • ½ cup (100g) sugar

  • ½ cups (50g) walnuts, roughly chopped (optional)

  • ½ cups (80g) chocolate chips (optional)

 

Topping

  • 1 medium banana

  • 1 tsp sugar

DIRECTIONS:
 

  1. Preheat oven to 165 degrees (C). Line a 9×5 loaf pan with baking paper.
     

  2. Mash bananas in a large bowl. 
     

  3. Add eggs, oil, and sugar to bananas. Mix well.
     

  4. Add in vanilla, cinnamon, cardamon, baking powder, baking soda, and salt. Mix well.
     

  5. Add the cornstarch and mix. 
     

  6. Add in the flour and mix until the batter is smooth.
     

  7. Mix in optional nuts/chocolate.
     

  8. Pour batter into prepared baking pan.
     

  9. Slice the left over banana down the centre lengthwise and place on top of the batter and sprinkle with the sugar. 
     

  10. Bake for approx. 1 hour, or until a knife inserted in the centre comes out clean.
