Healthy Muesli

Bars

INGREDIENTS:

For 12 serves 

Dry ingredients:

  • 1 cup rolled oats 

  • 1/2 cup flax meal 

  • 1/2 cup coconut flakes 

  • 1/2 cup mixed seeds (chia, sesame and hemp)

  • 1 cup mixed chopped nuts (walnuts & almonds) 

  • 1 tsp cinnamon 

  • pinch of sea salt 

Wet ingredients: 

  • 3/4 cup natural peanut butter

  • 4 tbsp coconut oil 

  • 1/3 cup maple syrup 

  • 1 tsp vanilla extract 

 

  • 4 small squares of dark chocolate (melted) to drizzle on top 

DIRECTIONS:
 

  1. Combine all of your dry ingredients in a large bowl.
     

  2. In a smaller bowl add all of your wet ingredients and mix well.
     

  3. Pour the wet ingredients into the dry ingredients and stir until the mixture forms a sticky mass. 
     

  4. Line a small casserole dish with baking paper and then pour the mixture into it. Using a spoon or your hands firmly press the mixture into the dish and create a flat and even surface.
     

  5. Place the casserole dish in the freezer for at least 4 hours or overnight. 
     

  6. Once the bar is set you can lift it out of the dish using the baking paper. You may need to leave it for 5 minutes after you first take it out of the freezer to make it easier to remove from the dish. 
     

  7. Once you take the bar out of the casserole dish you can cut the bar into 12 even pieces and then drizzle them with dark chocolate. After drizzling with the chocolate let the chocolate set for 5 minutes before eating them! 
     

  8. Store in the fridge in an airtight container for around 1 week.
