Chia Pudding with Strawberry Compote

INGREDIENTS:
For approx. 1 serving
Chia Pudding:

2 tbsp chia seeds

1/2 cup (125ml) almond milk

1/2 tsp vanilla extract
Strawberry Compote - For approx. 1 cup compote

500g strawberries
-
juice from an orange
-
1/4 tsp fresh ginger, minced
-
1 tbsp maple syrup

DIRECTIONS:
Chia Pudding

Add the chia seeds, milk and vanilla to a bowl or jar and stir together. Let sit for 10 minutes, then stir again once the seeds have started to gel.

Cover the bowl or jar and place in the refrigerator for at least two hours or overnight if you want it extra thick!

Stir the chia pudding before serving.
Strawberry Compote

Wash and cut the greens off the strawberries and quarter the strawberries.

Add the strawberries and the juice to a small saucepan. Cook over medium heat for 10-12 minutes, stirring frequently and occasionally mashing the strawberries until they disintegrate and begin to make a thick sauce.

Turn off the heat and add in the fresh ginger and maple syrup.

Remove from the heat and transfer to a clean jar or container to come to ambient temperature. Place a lid on and store in the fridge for up to week! Perfect with oats, chia pudding, pancakes and more!
