Baked Feta
Pasta

INGREDIENTS:
For 4 serves:

500g cherry tomatoes

5 garlic cloves, skin removed

250g feta
-
Bundle of fresh thyme
-
Salt and pepper to taste

3 tbsp olive oil
-
approx. 450g fresh pasta
-
12 fresh basil leaves, roughly chopped

DIRECTIONS:

Preheat the oven 200 degrees (C).

In a large casserole (oven) dish, stir together cherry tomatoes, 5 garlic cloves, 2 tbsp olive oil and salt and pepper.

Push the tomatoes to the sides of the dish then place the block of feta cheese in the centre. Drizzle the remaining 1 tablespoon olive oil and a sprinkle of salt and the bundle of fresh thyme on top of the feta.

Bake until the feta has softened and the tomatoes are roasted, about 30 minutes.

While the feta is baking, bring a large pot of salted water to a boil. Add the pasta and cook until al dente. Drain the pasta and set it aside (making sure to save some pasta water).

Remove the baking dish from the oven and using a fork mash the garlic and feta then add the freshly chopped basil. Using a large spoon stir everything together

Add the pasta to the baking dish with the pasta water and give it all a big toss to combine.

Garnish the pasta with fresh basil!
