Herby Cauliflower

Rice

INGREDIENTS:

  • 1 medium cauliflower 

  • 4 shallots, finely chopped 

  • 3 cloves garlic, mined 

  • 1 large handful coriander, finely chopped 

  • 1 large handful basil, finely chopped

  • zest from 1/2 lemon 

  • juice from 1/2 lemon 

  • 1/3 cup (50g) almonds, roughly chopped 

  • sea salt and cracked pepper to taste 

 

Dressing: 

  • 1-2 tbsp olive oil 

  • handful basil 

  • 1 handful of almonds 

DIRECTIONS:
 

  1. Prepare your cauliflower rice. You can either grate the cauliflower into small pieces or you can pulse it in a food processor until you reach a rice consistency. 
     

  2. In a pan on medium heat add some olive oil and sauté the shallots and garlic for 2 minutes. 
     

  3. Next add the cauliflower rice and cook for 5-7 minutes or until the cauliflower beings to brown. Turn the heat off and add the fresh herbs, lemon zest, lemon juice, the chopped almonds and season with salt and pepper. 
     

  4. In a food processor or in a mortar combine the ingredients for the dressing. You want to combine the ingredients together but you still want some small chunks of almonds so do not over processor or over smash!
     

  5. Add the cauliflower rice to a serving ball and top with the chunky almond and basil dressing and some more fresh herbs. Enjoy :)
