Healthy Tahini Cookies

INGREDIENTS:
For 12 cookies
Wet Ingredients

1/2 cup tahini

1/4 cup maple syrup

1 tsp vanilla
Dry Ingredients

1.5 cup rolled oats
-
1/3 cup walnuts, chopped

1/2 cup coconut flakes
-
1/2 tsp cinnamon
-
sprinkle of sea salt
Optional:

2 small blocks of dark chocolate roughly chopped for topping
DIRECTIONS:

Preheat the oven to 175 degrees (C) and line a baking tray with baking paper.

Add all of the wet ingredients to small bowl and mix until combined.

In a large bowl combine all of your dry ingredients and mix.

Pour the wet ingredients into the dry ingredients and stir until well combined. If the mixture seems to dry add another tbsp of tahini.

Using a tablespoon scoop out a decent size of the mixture and using wet hands roll the mixture into a small ball between your hands. Place on the baking tray and repeat the process. You should be able to make around 12 balls.

Once they are all on the tray gently press them down with you hand to make them flat (about 1 cm thick).

Optional: Add the chocolate chunks on top of the cookies and press them down slightly (being careful that the cookies don't start cracking).

Bake the cookies for 15 minutes or until golden!
