Blue cheese

& Beetroot Pizza



For 1 pizza

  • 1 ball Homemade Pizza dough (or store bought pizza base) 

  • 1 tbsp olive oil 

  • 2-3 handfuls of rocket (arugula) 

  • 1 large beetroot (roasted for 1 hour and sliced thinly)

  • 1/4 red onion 

  • 1/2 cup mozzarella 

  • 1/4 cup blue cheese, crumbled 

  • 2 tbsp parmesan 

  • 2 tbsp pine nuts 



  • fresh rocket, more parmesan and fresh oregano  


  1. Heat oven to 240 degrees (C) and line a baking tray with baking paper. 

  2. On a lightly floured surface, using your hands shape the pizza dough into a large oval, going as thin as you can but without creating wholes. I also like to create a thicker boarder. Then place on the baking paper-lined baking tray. 

  3. Brush 1 tbsp of olive oil onto the prepared dough and begin to add your toppings. Start with the mozzarella, then the rocket, beetroot, red onion, crumbled blue cheese, and pine nuts . Next sprinkle over the parmesan, sea salt and some cracked pepper. 

  4. Bake until crust is golden brown, 10 to 12 minutes. Top with some chilli flakes, more parmesan and fresh thyme!
