
Plum Baked Oatmeal
INGREDIENTS:
For 6 serves

1/2 cup toasted almonds

2 cups rolled oats

2 teaspoons cinnamon

1 teaspoon baking powder

1/2 teaspoon fine sea salt

2 cups milk
-
1 flax egg (1 tbsp ground flaxseed + 3 tbsp water)

1/3 cup pure maple syrup, plus more for serving

2 tbsp coconut oil, melted

2 teaspoons almond or vanilla extract

6-8 black plums, cut into thin slices
DIRECTIONS:

In a small bowl combine the ground flaxseed (linseed) with 3 tbsp of water and set aside for 5 minutes (this creates a vegan egg which will help the oats stick together).

Next, heat the oven to 175 degrees (C) fan-force. Butter / oil an 8-by-8-inch square baking dish (or something similar).

In large bowl, stir oats, cinnamon, baking powder, sea salt and 1/4 cup chopped toasted almonds until combined.

In separate medium bowl, whisk milk, flaxegg, maple syrup, melted coconut oil and almond extract.

Pour wet ingredients into dry ingredients; stir until just combined.

Place 1/2 of the sliced plums in single layer in prepared baking pan. Top with oat-milk mixture. Top with remaining sliced plums.

Bake 40 to 45 minutes until baked through and golden brown. Sprinkle the rest of the chopped almonds on top. Serve with dairy-free yoghurt.
