Plum Baked Oatmeal 

INGREDIENTS:

For 6 serves 

  • 1/2 cup toasted almonds

  • 2 cups rolled oats  

  • 2 teaspoons cinnamon

  • 1 teaspoon baking powder

  • 1/2 teaspoon fine sea salt

  • 2 cups milk

  • 1 flax egg (1 tbsp ground flaxseed + 3 tbsp water)

  • 1/3 cup pure maple syrup, plus more for serving

  • 2 tbsp coconut oil, melted

  • 2 teaspoons almond or vanilla extract

  • 6-8 black plums, cut into thin slices​

DIRECTIONS:
 

  1. In a small bowl combine the ground flaxseed (linseed) with 3 tbsp of water and set aside for 5 minutes (this creates a vegan egg which will help the oats stick together).
     

  2. Next, heat the oven to 175 degrees (C) fan-force. Butter / oil an 8-by-8-inch square baking dish (or something similar).
     

  3. In large bowl, stir oats, cinnamon, baking powder, sea salt and 1/4 cup chopped toasted almonds until combined.
     

  4. In separate medium bowl, whisk milk, flaxegg, maple syrup, melted coconut oil and almond extract.
     

  5. Pour wet ingredients into dry ingredients; stir until just combined.
     

  6. Place 1/2 of the sliced plums in single layer in prepared baking pan. Top with oat-milk mixture. Top with remaining sliced plums.
     

  7. Bake 40 to 45 minutes until baked through and golden brown. Sprinkle the rest of the chopped almonds on top. Serve with dairy-free yoghurt.
