Pickled Radish

INGREDIENTS:

10 small radishes, thinly sliced

Sprinkle of black peppercorn

A bundle of Fresh Thyme
Pickling Mixture - for approx. 1 x 500ml jar

1/2 cup apple cider vinegar
-
1 cups boiling water
-
30g sugar
-
1/2 tbsp salt
DIRECTIONS:

Thinly slice the radishes and set aside.

Mix the apple cider vinegar, boiling water, sugar and salt in a jar and stir (this is the pickling mixture)

In a new jar add the black peppercorn, thyme and sliced radishes. Pour the pickling mixture over the vegetables until filled to the top. Put a lid on and store in the fridge for 1-2 weeks.

Serve on sandwiches for some crunch, on top of salads or as a garnish on literally anything!
