Pear Baked Oatmeal 



For 6 serves:

Pear Mixture:

  • 6-8 medium sized pears, cut off the core and sliced thinly

  • 1/2 tsp cinnamon 

  • 1 tbsp maple syrup 


Oat Mixture:

  • 2 cups non-dairy milk of choice

  • 2 tbsp chia seeds

  • 1/4 cup (60 ml) maple syrup 

  • 1 teaspoon cinnamon

  • 1 teaspoon vanilla extract

  • 1 teaspoon baking powder 

  • ¼ teaspoon salt 

  • 2 cups (200 g) rolled oats 

  • 4 dates, finely chopped (optional)

  • 2/3 cup (75 g) roughly chopped walnuts 


  1. Preheat the oven to 190 degrees (C) fan-force and set a 9” x 6” (or similar) baking pan aside. 

  2. To begin place the sliced pears in a medium sized mixing bowl with the cinnamon and maple syrup. Gently toss the pears until they are evenly coated in the cinnamon and maple syrup. Then place the pears in the bottom of the baking dish. 

  3. Next, add the non-dairy milk, chia seeds, maple syrup, cinnamon, vanilla, baking powder, and salt to a large bowl and whisk until well-combined. Add the oats, dates, and walnuts to the bowl and mix until evenly incorporated, then transfer to the baking dish on top of the pears. Flatten the mixture down to create an even layer. 

  4. Bake in the middle rack of the oven for 40 to 45 minutes, until the oats are golden and fragrant. Serve warm, or as desired. Store leftovers in the fridge for up to 5 days, reheating in the oven or toaster if desired. 

  5. Serve with vegan yoghurt or vegan ice-cream!
