Pasulji (Serbian Baked Beans)

For 6 servings

  • 600g butter beans, tinned (cooked) drained and rinsed

  • 600g onions (5 large white onions) peeled, sliced into thin ribs

  • 2 tbsp paprika

  • 3 garlic cloves, minced

  • 4 pcs Bay leaves

  • 2 tbsp olive oil

  • 1-2 tsp salt

  • a pinch of Black pepper

  1. Preheat oven to 200 degrees (C) fan force.

  2. In a large pot combine the oil with the onions over medium heat. Simmer the onions for about 30 minutes, until very soft and deep yellow. You might have to add a drop of water from time to time to prevent onions from drying.

  3. When the onions are done, add the beans, garlic, paprika and bay leaves to the casserole. Season with salt and pepper, add about 2 cups of water, and mix gently. (The beans should be somewhat covered in water, but not swimming in it).

  4. Next pour the mixture into a casserole dish and place in the oven. Bake for about 1 – 1.5 hours. When done, the top layer of beans should be gently caramelized and fairly dry, most of the moisture having evaporated, while the beans inside should be wonderfully creamy and coated with onions.

  5. Serve warm or at room temperature with bread.
