Savoury Summer
Fruit Salad

INGREDIENTS:
For 4 serves:

1 medium Yellow Melon (Casaba Melon), skin removed and cut into thick chunks

1 grape fruit, skin removed and sliced into 1 cm thick circles or half circles

handful of blackberries

1/2 cup (50g) walnuts, roughly chopped

1/2 tbsp maple syrup
-
sprinkle of cinnamon
-
fresh tarragon
Dressing:
-
juice from 1/2 large lemon
-
zest from 1 lemon
-
1-2 tbsp maple syrup
-
1 tbsp olive oil
-
1/2 tsp sea salt
-
cracked black pepper
-
1/2 tsp paprika
-
1 tbsp, finely chopped tarragon
DIRECTIONS:

Preheat the oven to 175 degrees (C) and line a baking tray with baking paper.

Add your chopped walnuts to the baking tray with 1/2 tbsp maple syrup and a sprinkle of cinnamon. Give everything a mix with a spoon and bake for 10 minutes or until golden!

Make the dressing: Combine the lemon juice and zest, maple syrup, olive oil, sea salt, cracked black pepper, paprika and fresh chopped tarragon in a small bowl and stir until everything comes together. Try the dressing and add more lemon, maple syrup or salt depending on your personal preferences, if needed! You can also add a few tbsp of water to thin the dressing!

Toss the melon, grapefruit and black berries with the dressing carefully and then place in a serving bowl. Garnish with the candied walnuts and some fresh tarragon!
