Whipped Feta & Avo Toast



For 4 serves - 2 People 

  • 4 thick slices sourdough 

  • 1 large avocado 

  • 2 large chunks feta (approx. 50g) - I used soft Persian feta

  • Large handful of basil 

  • Large handful of mint 

  • Juice from 1 lime 

  • Drizzle of olive oil approx. 1 tbsp

  • Cracked black pepper to taste 

Topped with:

  • 8 small bocconcini balls (2 each piece of toast)

  • Drizzle of olive oil 

  • More fresh herbs 

  • Sprinkle of chilli flakes

  • Sprinkle of sea salt 


  1. Add your avocado, feta, basil, mint, lime juice, olive il and cracked black pepper to a food processor and process until smooth.

  2. Meanwhile, toast your sourdough. 

  3. Top your toasted sourdough generously with the avocado and feta mixture, next add your torn bocconcini balls, drizzle of olive oil, more fresh herbs, red chilli flakes and sea salt to taste. Enjoy!
