Rainbow Peanut Noodles

INGREDIENTS:

For 4 serves:

  • 12 oz soba noodles, approx 350g (or other noodles)

  • 1 cup shredded purple cabbage 

  • 1 cup shredded carrot

  • 1 cup edamame 

  • 1 cup spinach 

  • 2 capsicums, thinly sliced 

  • 1/2 cup coriander 

Healthy Peanut Sauce:

  • 3/4 cup organic peanut butter 

  • 3 tsp Sriracha 

  • 6 tbsp soy sauce 

  • 4 tbsp rice vinegar 

  • 1/3 cup water 

  • 1.5 tbsp maple syrup 

  • 1.5 tbsp sesame oil 

  • 1.5 tsp garlic, minced 

  • 1.5 tsp ginger, minced

Toppings:

  • 5 shallots, sliced 

  • Fresh coriander 

  • Sesame seeds

DIRECTIONS:

  1. Cook noodles to packet instructions and set aside.
     

  2. In a pan over medium heat add 1 tbsp sesame oil and quickly sauté your veggies for 5 minutes. 
     

  3. Next mix all of the ingredients for the peanut sauce together.
     

  4. Add your cooked noodles, slightly softened veggies and 3/4 peanut sauce together in a bowl and toss until everything is coated evenly in the peanut sauce. To finish toss through the fresh chopped spring onion. 
     

  5. Top with extra coriander and sesame seeds! Also add more peanut sauce if desrired
