For 1 wrap
1 cup spinach
Add the eggs and spinach to a blender and blend until combined.
Heat a non-stick pan on medium heat. You can add a little bit of oil to the pan if you're worried about it sticking.
Add the mixture to the pan and gently tilt the pan to spread the mixture out into a thin circle. Cook the wrap on each side for about 4 minutes or until golden and cooked through. Be careful when flipping as you don't want the wrap to break. I put a plate over the pan and flipped it onto the plate and then gently placed it back on the pan to cook both sides.
Serve with toppings of your choice. I did hummus, cherry tomatoes, capsicum, cucumber, mushrooms sautéed with some garlic, avocado and pickled red onions!
