Breakfast Granola with Clusters!

INGREDIENTS:
For 1 large jar
Wet Ingredients:
-
1 ripe banana, mashed
-
2 tbsp coconut oil, melted
-
1 tbsp maple syrup (or other sweetener)
-
2 tbsp nut butter (I used peanut butter)
Dry Ingredients:
-
2 cups rolled oats
-
1/2 tsp cinnamon
-
pinch of sea salt
DIRECTIONS:
-
Preheat the oven to 165 degrees (C) and line a baking tray with baking paper.
-
In a large bowl, add the wet ingredients and combine.
-
In another bowl add the dry ingredients and combine.
-
Pour the wet ingredients into the dry ingredients and mix until everything comes together and you're left with a sticky mixture.
-
Spread the mixture across a baking tray. Try to keep the mixture fairly stuck together to create the clusters.
-
Bake for 20-25 minutes or until golden and crispy. Mixing everything slightly halfway through the cooking time to stop the bits around the edges from burning. NOTE: do not mix too much as you won't end up with clusters.
-
Enjoy on top of yoghurt, smoothie bowls and porridge or by itself!
