IMG_2764_edited.jpg

INGREDIENTS:

For 1 large jar

Wet Ingredients:

  • 1 ripe banana, mashed

  • 2 tbsp coconut oil, melted

  • 1 tbsp maple syrup (or other sweetener)

  • 2 tbsp nut butter (I used peanut butter)

Dry Ingredients:

  • 2 cups rolled oats

  • 1/2 tsp cinnamon

  • pinch of sea salt

DIRECTIONS:

  1. Preheat the oven to 165 degrees (C) and line a baking tray with baking paper.

  2. In a large bowl, add the wet ingredients and combine.

  3. In another bowl add the dry ingredients and combine.

  4. Pour the wet ingredients into the dry ingredients and mix until everything comes together and you're left with a sticky mixture.

  5. Spread the mixture across a baking tray. Try to keep the mixture fairly stuck together to create the clusters.

  6. Bake for 20-25 minutes or until golden and crispy. Mixing everything slightly halfway through the cooking time to stop the bits around the edges from burning. NOTE: do not mix too much as you won't end up with clusters.

  7. Enjoy on top of yoghurt, smoothie bowls and porridge or by itself!
