
Homemade Granola
INGREDIENTS:
Wet Ingredients

6-8 large dates, pitted (the more dates the more sweater the granola)

3 tbsp coconut oil

100ml water
Dry Ingredients:

2 cups rolled oats

1 cup mixed chopped nuts (can be any, I did almonds and walnuts)

150g seed mixture (I did 50g pumpkin seeds, 50g flax seed (linseed) and 50g chai seeds)

0.5-1 tbsp cinnamon

150g coconut shards
-
50g dried cranberries (or raisins)
DIRECTIONS:

Set the oven to 150 degrees (C) fan-force.

In a medium bowl mix your dry ingredients together (except the coconut shards and dried cranberries).

Add your wet ingredients to a deep pot and cook until they form a paste.

Next add the dry ingredients to the pot and mix until the paste is completely incorporated into the dry ingredients.

Pour the mixture out onto a baking tray lined with baking paper (you may need 2 trays).

Total baking time is 20-25 minutes. However, after 10 minutes take the trays out and add the coconut shards and dried cranberries and mix through then complete the rest of the cooking time.

Once finished baking the muesli should be slightly golden and cooked. Remove from the oven and let cool, then jar the muesli in an airtight container / jar and enjoy on top of some yoghurt or for other purposes.
