Healthy Banana Oat Pancakes

INGREDIENTS:
For 10-12 small pancakes

1 cup rolled oats (processed into flour)

1 cup almond milk

1 banana, mashed
-
1 tsp cinnamon
-
2 tsp baking powder
Optional Toppings:

Pecans, blueberries and almond butter
DIRECTIONS:

Add your rolled oats to a blender and process until oat flour forms.

Next add the remaining ingredients to the blender with the flour and process until a smooth batter forms. You may need to add more milk if the batter seems too thick.

Place a little bit of coconut oil (or alternative oil) in a frying pan on medium heat (alternatively you can use a non-stick pan). Once the pan is hot pour the mixture into the pan and create 3 small pancakes. Cook on each side for approx. 2 minutes. You should flip when you see small bubbles forming on the surface of the pancakes.

Repeat this step for the rest of the batter. Add more oil to the pan in-between adding new pancakes to the pan. You should be able to make approx. 10-12 small pancakes :)

Serve with optional toppings or toppings of your choice!
