Healthy Apple Crumble
INGREDIENTS:
For 6 servings
-
6-8 red apples, peeled and sliced thinly
-
3 tbsp maple syrup
-
1 tbsp cinnamon
-
1 tsp vanilla extract (optional)
Crumble Topping:
-
1.5 cups rolled oats
-
1 cup nuts (I did almonds), ground into flour
-
2 tsp cinnamon
-
3 tbsp pure maple syrup
-
3 tbsp coconut oil, melted
DIRECTIONS:
-
Start by preheating your oven to 175 degrees (C) and set aside an 8x8 baking dish.
-
Place all of your peeled and sliced apples into a large sauce pan over medium-low heat. Add in the maple syrup, cinnamon and vanilla (optional) stir to combine. Cook the apples for about 10 minutes or until softened.
-
While the apples are cooking, prepare the crumble topping by mixing together in a large bowl the oats, ground nuts and cinnamon. Pour over the maple syrup and coconut oil and mix until combined. Add 1-2 tbsp of water if the mixture seems too dry.
-
Once the apples have softened, pour them into your baking dish and top them with the crumb mixture.
-
Place the baking dish into your oven and bake for about 20-25 minutes or until the top turns golden brown. Serve warm with dairy-free yogurt! It is a must!
