Healthy Apple Crumble

For 6 servings

  • 6-8 red apples, peeled and sliced thinly

  • 3 tbsp maple syrup

  • 1 tbsp cinnamon

  • 1 tsp vanilla extract (optional)

Crumble Topping:

  • 1.5 cups rolled oats

  • 1 cup nuts (I did almonds), ground into flour

  • 2 tsp cinnamon

  • 3 tbsp pure maple syrup

  • 3 tbsp coconut oil, melted

  1. Start by preheating your oven to 175 degrees (C) and set aside an 8x8 baking dish.

  2. Place all of your peeled and sliced apples into a large sauce pan over medium-low heat. Add in the maple syrup, cinnamon and vanilla (optional) stir to combine. Cook the apples for about 10 minutes or until softened.

  3. While the apples are cooking, prepare the crumble topping by mixing together in a large bowl the oats, ground nuts and cinnamon. Pour over the maple syrup and coconut oil and mix until combined. Add 1-2 tbsp of water if the mixture seems too dry.

  4. Once the apples have softened, pour them into your baking dish and top them with the crumb mixture.

  5. Place the baking dish into your oven and bake for about 20-25 minutes or until the top turns golden brown. Serve warm with dairy-free yogurt! It is a must!
