Breakfast Cookies



For approx. 12 cookies 

  • 1.5 cups (150g) rolled oats 

  • 2/3 cup (60g) almond meal 

  • 5 tbsp desiccated coconut 

  • 1 tsp cinnamon 

  • 2 tbsp chai seeds (optional) 

  • 1/2 tsp baking soda 

  • 4 tbsp organic peanut butter (or other natural nut butter)

  • 4 tbsp maple syrup 

  • 2 mashed bananas 

  • Fresh or dried berries, to decorate 


  1. Preheat the oven to 160° (C) degrees fan-force and line a baking tray with a piece of baking paper.

  2. Place all the ingredients (apart from the berries) in a medium bowl.

  3. Mix really well to make sure all the wet ingredients are evenly distributed. The mixture should be dense and sticky. 

  4. Chill the mixture in the freezer for 10-15 minutes.
