Banana Breakfast Bars


For 12 serves

  • 3 very ripe bananas  

  • 300g rolled oats 

  • 150 ml almond milk 

  • 3 tbsp peanut butter (or any nut butter) 

  • 1 tbsp ground cinnamon 

  • 1.5 tbsp maple syrup 

  • 1tsp vanilla extract (optional)

  • 1 tbsp coconut oil (melted) 

  • 1/2 cup (35g) coconut flakes 

  • Crushed almonds for topping (optional)


  1. Preheat oven to 175 degrees (C) fan-force. 

  2. In a medium bowl add the bananas and mash with a fork. 

  3. Next add all of the ingredients to the bowl and stir together. 

  4. Thoroughly oil a baking dish with coconut oil or line it with baking paper to prevent the bars from sticking. 

  5. Spoon the mixture into the dish and top with chopped almonds and more coconut flakes (make sure to slightly press the almonds down into the mixture to prevent them from burning). 

  6. Bake for 15 minutes. Leave to cool, then cut into bars. Store in airtight container in the fridge for up to 5 days.
