Autumn Porridge

INGREDIENTS:

For 2 serves 

  • 1 cups (90g) rolled oats 

  • 1 cup water (240ml) 

  • 1 cup almond milk (240ml)

  • 1 tsp cinnamon 

  • 1/2 tsp nutmeg 

  • 1 tsp coconut oil (or other oil/vegan butter) 

  • 1 small red apple, chopped into cubes (sprinkled with cinnamon and nutmeg)

DIRECTIONS:
 

  1. Add the first 5 ingredients to a pot and bring to the boil. Once the oats begin to bubble reduce the heat to a low-medium heat and cook for 5 minutes (until thick and creamy) - Add more liquid if necessary
     

  2. Meanwhile, add 1 tsp coconut oil (or other oil/butter) to a frying pan and add your chopped apples. Sprinkle with cinnamon and nutmeg and cook for 5 minutes (until the apple is cooked and caramelised.
     

  3. Split the porridge between two bowls and top with optional toppings. I chose1 tsp peanut butter, 1 tsp maple syrup, a handful of pumpkin seeds and a sprinkle of coconut flakes!
