Apple & Ginger Overnight Oats

(Bircher Muesli)


For 2 serves

  • 1 cup (90g) rolled oats 

  • 1/2 tbsp fresh ginger, grated 

  • 1 tsp cinnamon 

  • 4 tbsp chopped almonds 

  • 2 tbsp hemp seeds (or chia seeds) (optional)

  • 4 dates, finely chopped (or 2 tbsp maple syrup)

  • 1 apple, grated 

  • 200g plain nondairy yoghurt 

  • 150ml dairy-free milk 

  • Optional Toppings: chopped apple, maple syrup, hemp seeds and more chopped almonds 


  1. In a medium bowl or container with a lid, combine all of the ingredients and give a big stir. Cover and refrigerate overnight.

  2. The next morning the oats will be thick and creamy. If the mixture is too dry add a little bit of milk until you get the desired consistency (don't add too much!

  3. Top with extra chopped apple, a sprinkle of hemp seeds, more chopped almonds and a drizzle of maple syrup!
