
Apple & Ginger Overnight Oats
(Bircher Muesli)
INGREDIENTS:
For 2 serves

1 cup (90g) rolled oats

1/2 tbsp fresh ginger, grated

1 tsp cinnamon

4 tbsp chopped almonds

2 tbsp hemp seeds (or chia seeds) (optional)

4 dates, finely chopped (or 2 tbsp maple syrup)

1 apple, grated
-
200g plain nondairy yoghurt

150ml dairy-free milk

Optional Toppings: chopped apple, maple syrup, hemp seeds and more chopped almonds
DIRECTIONS:

In a medium bowl or container with a lid, combine all of the ingredients and give a big stir. Cover and refrigerate overnight.

The next morning the oats will be thick and creamy. If the mixture is too dry add a little bit of milk until you get the desired consistency (don't add too much!

Top with extra chopped apple, a sprinkle of hemp seeds, more chopped almonds and a drizzle of maple syrup!
